Five hours a week of exercise? Check. Better fats and more protein? Check. Not starving yourself? Done. They even suggested my exact protein shake recipe. My big problem has just been that I've been slipping on portion size and have stopped replacing carbs with vegetables. So...I need a little reminder on healthy foods I really like...

Broccoli...eating a broccoli omelet right now. I love the taste of it when it's overcooked
Spinach...even in its non-creamed state, it's good stuff
Asparagus...LOVE it baked (over baked) with lemon and olive oil
Nuts...pecans, cashews and pistachios only need apply
Herbs of all kinds...extra flavor with greenery points!
Fennel...cooked only. Cooked. Only.
Anything out of the sea...seriously...anything.
So yeah...making a small change back to where I used to be. Dinners that are based more on greens than potatoes again. Hopefully I won't miss the red creamers too much.

My wife cooks roast with parsnips instead of potatoes. I love them, it gives me that taste without all the starches of potato.
I agree with all of your choices, but I have not tried Fennel yet.

Ooo...parsnips. I've honestly never tried one. I don't see them too often in stores down here, but I'll definitely give them a shot.
I can't think of any healthy foods I actually like, except maybe pink lady apples (and those are so sweet there must be a load of natural sugars or something).
The only way I can stomach vegetables is to boil them into mush or slather them in enough cheese to hide the taste. I remain jealous of my father, who loves salad. ;)
I'm in a similar spot Slidey...for the most part, I'm anti-vegetable...I don't do salads and could easily skip greens. I force myself to drink vegetable blends just so I'm getting some plant life in me. I've got that same jealousy of people that love them.
Fruit smoothies are cool, and I have a smoothie maker. Not yet tried it with vegetables though, so I should look up some good recipes.

Just slather it all in chocolate. As long as the chocolate is dark, I think you're okay. : )
Dark chocolate covers all and is technically a vegetable. I like it.
Have you tried making Tabouli salad? Soooo easy and there are tons of recipes on the net. The down and dirty version (the I-don't-measure-version) is a couple handfuls of parsley, cilantro, basil, all thrown together and finely chopped. Add some cous cous, lemon juice and salt and pepper to taste.
A cuisine-art or other "chopper" type of kitchen appliance makes the prep time for this dish under 15 minutes.
Megan-- I usually don't care for sweet potatoes. However I have discovered a healthy(ish) way to eat them that doesn't emphasize their sweetness! Just peel and slice very thin like potato chips.. spray a little olive oil on (or put in a ziploc bag and pour in a little oil, like 1 Tbsp, and rub it around) and then sprinkle with taco seasoning! Bake on a cookie drying rack in the oven at 425-450 degrees (I forget for how long but you'll know, don't burn them!) They won't be really crispy, but they'll have a nice savory zesty flavor and you'll find yourself eating a whole baked potato which is really good for you.
Also, I highly recommend mashing up a bunch of blueberries in some lemonade... let it sit for an hour or two, then strain (put the blueberry mash in your smoothie!) The blue anthocyanins that remain in your purple lemonade will make your lemonade healthier too! :)
